Cheesy Baked Spaghetti Squash

  • 1 medium spaghetti squash
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 40-45 minutes until tender.
  4. Once cooked, allow it to cool slightly, then use a fork to scrape the flesh into strands.
  5. Mix the spaghetti squash strands with marinara sauce, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  6. Transfer the mixture back into the squash halves and top with additional mozzarella cheese.
  7. Bake for an additional 20 minutes until the cheese is melted and bubbly.
