Blueberry Lemon French Toast Casserole Overnight

A delicious and easy overnight casserole that combines the flavors of blueberries and lemon for a perfect breakfast.

  • 1 loaf challah bread, cubed
  • 2 cups fresh blueberries
  • 1 cup milk
  • 1 cup heavy cream
  • 4 large eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla extract, lemon zest, and cinnamon.
  2. Layer the cubed challah bread and blueberries in a greased baking dish.
  3. Pour the egg mixture over the bread and blueberries, making sure to saturate all the bread.
  4. Cover and refrigerate overnight.
  5. In the morning, preheat the oven to 350°F (175°C) and bake uncovered for 45 minutes or until golden brown.
