  • 1 cup crushed vanilla wafers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
  • 1 cup additional crushed vanilla wafers for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mixed together crushed vanilla wafers and melted butter until combined. Press mixture into the bottom of a springform pan to form a crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in heavy cream, mashed bananas, and vanilla extract until fully combined.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake in the preheated oven for 60 minutes, or until the center is set. Allow to cool at room temperature, then refrigerate for at least 4 hours.
  7. Before serving, top with whipped topping and additional crushed vanilla wafers.

Notes
