  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 3 large eggs
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 ripe bananas, sliced
  • 1/2 cup banana pudding mix
  • 1 cup crushed vanilla wafers

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth.
  4. Add eggs, one at a time, mixing well after each addition. Stir in vanilla.
  5. Pour the cream cheese mixture over the crust.
  6. Bake for 60 minutes or until the center is set. Cool completely.
  7. Whip heavy cream and fold in banana pudding mix until combined.
  8. Spread the mixture over the cooled cheesecake, topping with sliced bananas and crushed vanilla wafers.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For added crunch, sprinkle more crushed vanilla wafers on top before serving.
  • Keep the cheesecake covered in the fridge if not consumed immediately.
