Bacon Egg and Cheese Breakfast Quesadillas

A delicious and easy recipe for bacon egg and cheese breakfast quesadillas made with turkey bacon.

  • 4 turkey bacon strips
  • 4 large eggs
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 2 large tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet over medium heat, cook the turkey bacon until crispy, then remove and crumble.
  2. In the same skillet, add olive oil, crack the eggs, and season with salt and pepper. Scramble the eggs until cooked.
  3. Combine the crumbled bacon and eggs, then distribute the mixture evenly on one half of each tortilla.
  4. Sprinkle cheese over the egg and bacon mixture, then fold the tortillas over.
  5. Cook the quesadillas in the skillet for about 2-3 minutes on each side until golden brown and cheese is melted.
  6. Cut into wedges and serve with your favorite salsa or hot sauce.
