Bacon Blue Cheese Potato Salad

A delicious twist on a classic potato salad featuring turkey bacon and blue cheese.

Ingredients

  • 2 pounds potatoes
  • 4 slices turkey bacon
  • 1 cup blue cheese crumbles
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons chopped chives

Instructions

  1. Boil the potatoes until tender, then drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it.
  3. In a large bowl, combine the mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and pepper.
  4. Chop the cooled potatoes and add them to the bowl along with the bacon and blue cheese.
  5. Toss everything together until well combined.
  6. Garnish with chopped chives before serving.

Notes
