Asian Noodle Salad in Peanut Dressing

A refreshing and easy-to-make Asian noodle salad coated in a creamy peanut dressing.

  • 2 cups mixed vegetables, julienned
  • 1/2 cup peanuts, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 tablespoons lime juice

Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the mixed vegetables, peanuts, cilantro, and green onions.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, sesame oil, honey, and lime juice until smooth.
  4. Add the cooled noodles to the vegetable mixture and pour the peanut dressing over the top.
  5. Toss everything together until well combined. Serve chilled or at room temperature.

Notes

  • For extra spice, add some red pepper flakes to the dressing.
