Aromatic Ginger Scallion Chicken Noodle Soup

Ingredients

  • 1 pound chicken thighs
  • 2 teaspoons ginger, grated
  • 4 stalks scallions, chopped
  • 8 cups chicken broth
  • 1 tablespoon soy sauce
  • 8 ounces rice noodles
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add ginger and garlic, sauté until fragrant.
  3. Add chicken thighs and cook until browned.
  4. Pour in chicken broth and soy sauce, then bring to a boil.
  5. Reduce heat and simmer until chicken is cooked through.
  6. Remove chicken, shred, and return to pot.
  7. Add rice noodles and cook according to package instructions.
  8. Stir in chopped scallions and season with salt and pepper.
  9. Serve hot, garnished with additional scallions if desired.

Notes

  • For extra flavor, marinate chicken in soy sauce and ginger for 30 minutes before cooking.
