  • 1 cup apple cider
  • 4 sweet potatoes
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon cinnamon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the pork loin with salt and pepper.
  3. In a large skillet, sear the pork on all sides until browned.
  4. Transfer the pork to a baking dish and pour the apple cider over it.
  5. Bake for 1 hour or until the internal temperature reaches 145°F (63°C).
  6. Meanwhile, peel and chop the sweet potatoes.
  7. Boil the sweet potatoes in salted water until soft.
  8. Drain and mash the sweet potatoes with butter, milk, and cinnamon.
  9. Serve the pork sliced with the mashed sweet potatoes on the side.
