30 Minute Broccoli Cheddar Soup

  • ½ teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until the onion is translucent.
  2. Add broccoli and vegetable broth, bringing to a boil. Cook until broccoli is tender, about 5 minutes.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender and blend in batches.
  4. Return the soup to the pot, stir in milk and cheese, cooking until cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste, then serve hot.
