- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
